It’s Australia Day and what foods are more Australian than lamb and lamingtons? So, why not combine the two as a lambington. Recipe follows…


  • Cold lamb chops
  • Icing sugar
  • Cocoa powder
  • Butter
  • Milk
  • Dessicated coconut


Make the chocolate icing by sifting 500g icing sugar and 1/3 cup of the cocoa powder together. Add two teaspoons of melted butter to half a cup of warmed milk, then add to the sugar and cocoa mixture until a smooth consitency is achieved. Coat the lamb chops with the icing, then coat with the dessicated coconut.

P.S. I have no idea how this tastes and have no desire to try it out for myself!
